WHEN it comes to chopping chilled meat, man still beats machine. At family-run business KSP Marketing, which specialises in processing pork, skilled butchers are needed.

While most sectors across Singapore face cost and manpower challenges, KSP Marketing is particularly hard-hit. Butchers needed to handle chilled pork are in woefully short supply, says company director Linda Koh.

“Chilled items are very labour-intensive. The meat has to be cut into small parts, and each piece of meat is different. We don’t have machines that can do that yet,” she says. “It’s very difficult to find experienced workers in this industry.”
